Easy Sushi Bowls with Target

Today my daughter Kate and I are making one of our new favorite recipes: sushi bowls! Essentially this recipe is like a deconstructed sushi roll, but the salmon is cooked (not raw). I like to use coconut rice for my sushi bowls to take the flavor to the next level!

Why I Love Getting Groceries at Target

We got all of the ingredients for this recipe at Target, where you can find affordable ingredients for weeknight meals. I love that Target is a one-stop-shop for grocery staples, cute clothes, birthday gifts, home decor—basically everything I need in life.

I’ve totally relied on Target order pickup and drive-up this year, and now I don’t know what I would do without it! I love being able to quickly swing by Target to get last-minute ingredients I need for a meal—without even leaving my car.

This Cuisinart cookware set and jumbo baking sheets are the perfect kitchen tools to cook the salmon and rice. We made the meal a little fancier by serving it with these cute Target floral napkins. Finally, we timed ourselves with my Apple Watch, which has SO many functions. We pushed ourselves a bit and successfully had dinner on the table in 25 minutes!

How to Make Sushi Bowls

  1. Make coconut rice by combining rice, coconut milk, water, sugar, and salt in a pot. Bring to a boil, then turn down to a simmer. Cover with the lid and let cook for 15 minutes, or until rice is tender and liquid has absorbed.
  1. Preheat the oven to broil on high.
  2. Place salmon filets, skin-side down on the aluminum foil.  Drizzle sesame oil over the filets and sprinkle with salt and pepper.
  3. Broil salmon for 7 minutes.
  4. Assemble sushi bowls.  Put a large scoop of rice in a bowl.  Add a salmon filet and diced avocado.  Drizzle with sriracha mayo and add seaweed on the side.
  1. Eat by spooning rice, salmon and avocado in a seaweed sheet.  Fold in half and enjoy!
