Mexican Street Corn Dip
Ingredients
2 16-
oz
Bags of frozen roasted corn
or frozen white corn

Cilantro

Frozen garlic cubes

Cotija cheese

Chile lime seasoning

Lime
squeezed
1/4

Mayonnaise

tablespoon
Olive oil
Tortilla chips
Instructions
Add 1 tablespoon of olive oil or avocado oil to a hot pan
Add 2 16-ounce bags of frozen roasted corn (or frozen sweet corn)
Chop 1/2 cup cilantro
Cut a lime in half
Crumble 1/2 cup cotija cheese
Add 2 frozen garlic cubes
Add 1/4 cup mayonnaise
Add 1 teaspoon chile lime seasoning, cheese, cilantro, and juice of one lime
Use blue corn tortilla chips to scoop up dip
Serve hot or cold, and add quesadillas to make it a meal
