I came up with the recipe a few years ago when I wanted a holiday version of my favorite Rice Krispie Treats. It’s been one of the Christmas treats I look forward to most ever since. These white chocolate peppermint rice krispie treats are easy to make, don’t require turning on the oven, and are sure to be a crowd-pleaser.
Whenever I create recipes, I love to find the perfect ratios that use up entire containers of food (so you’re not left with awkward leftovers). This recipe does just that! With one stick of butter, two bags of mini marshmallows, one box of rice krispies cereal, and a few candy canes, you’ll have just what you need – not more and not less.

To assemble these delicious white chocolate peppermint rice krispie treats, melt one stick of butter in a large stock pot over medium heat.
Add one and a half bags of the mini marshmallows and stir until melted and smooth. You’re reserving the half bag of marshmallows to add later so there are chunks of fluffy marshmallow throughout.
Remove from heat and stir in peppermint extract.
Add rice krispies and and stir until evenly coated.
Add remaining marshmallows and white chocolate chips. Stir until everything is evenly distributed.
Line a 9×13″ baking dish with parchment paper and spray lightly with nonstick spray. Pour rice krispies into the pan. Get your hands wet with water and press down firmly into the pan.
Sprinkle crushed candy canes on rice krispie treats and press down firmly. Chill until set.
Cut into squares and enjoy!
