I’ve shared my family’s favorite coconut rice recipe several times on Instagram Stories. But it’s SO good and we make it so often that I decided it definitely needs a permanent place on my blog.
This recipe is delicious, rich, creamy, and a little bit sticky (which I love). It’s easy to make and doesn’t have a strong coconut taste. In fact, I would recommend trying it even if you’re not usually a big fan of coconut. The coconut milk simply adds a layer of richness you just can’t get with plain rice. Yet, you probably won’t notice a distinct coconut flavor.
You can make this coconut rice recipe with full-fat or reduced-fat coconut milk. But I highly recommend using full-fat. Why? Because it’s creamier and just tastes so much more rich and flavorful!
Make it on the stovetop or Instant Pot—whichever you prefer! I usually make it on the stovetop for simplicity’s sake, but it comes out perfect either way. Both options take about 15 minutes to make and are very easy to whip up for a weeknight meal. I’ve included instructions for both the stovetop version and Instant Pot version in this coconut rice recipe!
Coconut rice goes with anything and everything. Serve it with protein like grilled chicken, salmon, or beef. Or pair it with stir-fry, curry, or any other dish you would normally serve with rice.
Trust me—the whole family will love it so much, you won’t ever want to make plain rice again!
1 ½ cups uncooked jasmine rice
1(14 oz) cans full-fat coconut milk
14 oz water (I use the empty coconut milk can to measure)
1 tsp granulated sugar
1 tsp salt
On the stovetop:
In a large saucepan, combine all ingredients and stir well.
Bring to a boil over medium heat.
Cover, reduce heat to low, and simmer 15 minutes until rice is tender and liquid is absorbed.
Fluff rice and serve warm.
In the Instant Pot:
In the bowl of an Instant Pot pressure cooker, combine all ingredients and stir well.
Put the lid on and make sure the knob is turned to the “sealed” position.
Set the Instant Pot to pressure cook on high for 5 minutes. After the 5 minutes are over, let the pressure release naturally for 10 minutes.
Fluff rice and serve warm.
