With cooler weather and the changing of seasons, I always get excited for the change in cooking and baking. I love eating in the crisp, outdoor air of our Carolina room with a big bowl of soup. One recipe we have on repeat each fall is chili. This is the chili recipe my mom made when I was growing up. She got it from my aunt, Sue, and it’s still a family favorite.

This chili recipe consists of mostly canned products that you throw into a pot and heat through! The only thing I add to the original recipe is a couple bell peppers. When you chop them up small, they’re barely visible in the chili, so it’s a nice way to add a few more vegetables.
To prepare this easy chili, heat a large pot over medium high heat. Add the ground beef, onion, peppers, salt and pepper. Cook until the beef is cooked through and the vegetables are tender.
Add chili beans, kidney beans, tomatoes and tomato sauce (all undrained). Heat through.
Serve with shredded cheese, sour cream, diced avocado and a squeeze of fresh lime juice. We also love the hint of lime tortilla chips as a side.
