Tablespoon Mug Cake

The search for the perfect mug cake ends here. After years of trying every different mug cake recipe I came across, I was disheartened. Most were either dry and unappetizing, difficult to make with strange ingredients, or loaded with sugar.

So I set out on a quest to create my own recipe. After many attempts, I finally landed on this one. And it's perfection. SO simple (because all of the measurements are 1 Tbs), flavorful, moist, and made with healthy ingredients. It's been a nightly ritual ever since.

Sometimes I add a few chocolate chips to the mug cake mix before I heat it up, sprinkle the top with powdered sugar, enjoy with fresh berries, or when I really want to take it over the top, scoop some vanilla ice cream onto the warm cake.

Tablespoon Mug Cake

  • 1 Tbs Kodiak Cakes pancake mix
  • 1 Tbs cocoa powder
  • 1 Tbs coconut oil
  • 1 Tbs pure maple syrup
  • 1 Tbs peanut butter
  • 1 egg
  1. Combine all ingredients in a microwave-safe mug. Stir until incorporated.

  2. Microwave on high for 45-60 seconds.

  • You can substitute whole-wheat or all-purpose flour if you don't have Kodiak Cakes mix
