
I'm all about a one-stop meal: a recipe that comes together quickly and has ingredients that can all be found at one store. It's just so nice to have a go-to meal that you know everyone loves and won't take a long time to make.
Today, I'm excited to share this Mexican street corn dip. It makes a great snack, party appetizer, or main dish (served with quesadillas or tacos), and you can find all of the ingredients at Trader Joe's!
Ingredients for Mexican Street Corn Dip
- Frozen roasted corn (or frozen white corn)
- Cilantro
- Garlic cubes
- Cotija cheese
- Chile lime seasoning
- Fresh lime juice
- Mayonnaise
- Olive oil
- Tortilla chips

How to Make Mexican Street Corn Dip
- Add 1 tablespoon of olive oil or avocado oil to a hot pan
- Add 2 16-ounce bags of frozen roasted corn (or frozen sweet corn)

- Chop 1/2 cup cilantro
- Cut a lime in half
- Crumble 1/2 cup cotija cheese
- Add 2 frozen garlic cubes

- Add 1/4 cup mayonnaise
- Add 1 teaspoon chile lime seasoning, cheese, cilantro, and juice of one lime

- Use blue corn tortilla chips to scoop up dip
- Serve hot or cold, and add quesadillas to make it a meal
