
One of my favorite traditions for the first day back to school is to have freshly baked cookies and milk waiting for my kids when they get home. We started the tradition a few years ago, and these easy lemon cookies have been my go-to for the occasion. They come together in minutes and are always a crowd-pleaser in our home.
Whether you make them for the first day of school or any other occasion, they're sure to be a hit!

How to Make Easy Lemon Cookies
- Combine dry cake mix, oil, and eggs in a bowl. Mix until combined.

- Add lemon zest and white chocolate chips (if using). Stir to combine.
- Scoop dough and roll in powdered sugar.

- Place on a baking sheet lined with a silicone mat.
- Bake at 350 degrees for 8-12 minutes, until edges are just barely starting to brown.

Easy Lemon Cookies
- 1 box lemon cake mix
- 1/3 cup oil (canola, vegetable, or melted coconut)
- 2 eggs
- lemon zest (optional)
- powdered sugar (for rolling cookie dough)
- white chocolate chips (optional)
