Baked Oatmeal with Milk and Berries

We love oatmeal in our home and baked oatmeal is the perfect way to make a batch for a crowd. This recipe is super easy to make and you can even prepare it ahead of time. If you want to make it the night before, you can keep it in the fridge and bake it in the morning. It makes the perfect breakfast or brunch, but we often have it as a breakfast for dinner option, too!

Ingredients

1 ½ cups milk
⅔ cup coconut oil, melted
½ cup honey
3 eggs
1 tsp vanilla extract
3 ½ cups old fashioned oats
2 tsp baking powder
1 tsp cinnamon
½ tsp salt

Instructions

Begin by preheating your oven to 350 degrees F.

In a medium bowl, combine the milk, melted coconut oil, honey, eggs and vanilla and whisk until smooth.

Combine liquids and whisk

In a large separate bowl, combine oats, baking powder, cinnamon and salt. 

Add seasoning to oats

Pour liquid mixture into dry ingredients and stir until well combined.

Pour the liquid over the oat mixture

Spray a 9×13” baking dish with nonstick spray and pour the oat mixture into the dish.

Pour into a dish

Pop it in the oven to bake for 30 minutes. When it’s finished, it will be set and lightly golden around the edges.

We love to serve our baked oatmeal with milk and berries.

Don’t forget! You can make this the night before, cover it, place in the fridge, and bake in the morning. It’s will be a lifesaver for your mornings!
