Lactation Peanut Butter Chocolate Chip Protein Balls
Ingredients

peanut butter (or almond butter)
1/2
cup
honey

tsp
vanilla extract

ground flaxseed

brewer’s yeast
1/4
cup
unsweetened shredded coconut
1 1/2
cups
old-fashioned oats
1/2
cup
mini chocolate chips
Instructions
In a stand mixer, combine the peanut butter, honey, vanilla, flaxseed, and brewer’s yeast. Mix until smooth.
Add the oats, coconut, and chocolate chips. Mix well to combine.
Scoop into balls using a mini cookie scoop and place in an airtight container, using parchment paper between layers.
Store in the refrigerator.
Notes
These keep beautifully in the fridge for a week—or you can stash them in the freezer for easy grab-and-go snacking.
