Mexican Street Corn Dip

Ingredients

  • 2 16- oz Bags of frozen roasted corn or frozen white corn
  • 1/2 cup Cilantro
  • 2 Frozen garlic cubes
  • 1/2 cup Cotija cheese
  • 1 teaspoon Chile lime seasoning
  • 1 Lime squeezed
  • 1/4 cup Mayonnaise
  • 1 tablespoon Olive oil
  • Tortilla chips

Instructions

  • Add 1 tablespoon of olive oil or avocado oil to a hot pan
  • Add 2 16-ounce bags of frozen roasted corn (or frozen sweet corn)
  • Chop 1/2 cup cilantro
  • Cut a lime in half
  • Crumble 1/2 cup cotija cheese
  • Add 2 frozen garlic cubes
  • Add 1/4 cup mayonnaise
  • Add 1 teaspoon chile lime seasoning, cheese, cilantro, and juice of one lime
  • Use blue corn tortilla chips to scoop up dip
  • Serve hot or cold, and add quesadillas to make it a meal
