Grilled Chicken Marinade

A great, neutral chicken flavors that can be used for taco meat or paired with any variety of sides.

Ingredients

  • 2-3 lbs skinless chicken breasts, tenders, or thighs
  • 1/2 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp whole grain mustard
  • 2 cloves garlic minced
  • 1 lime juiced
  • 1 lemon juiced
  • 1/4 cup brown sugar or sub coconut sugar
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  • In a large bowl, whisk together all marinade ingredients.
  • Place chicken in the mixture and let marinade for 1-8 hours. (Do not marinate overnight, as the citrus can change the texture of the chicken if left too long.) 
  • Preheat grill to medium-high heat.
  • Grill chicken for about until the internal temperature reaches 165 degrees, flipping once. (Chicken breasts take about  7 minutes per side, chicken thighs take about 5 minutes per side, and chicken tenders take about 3-4 minutes per side.)
  • Let rest for 5 minutes before slicing.
