Turn Instant Pot to “saute”. Melt coconut oil and butter in pot until bubbling.
Pour in popcorn kernels and stir until coated.
Place lid on instant pot, allowing it to vent (not pressure cook).
Allow 3-4 minutes for kernels to pop. Once there’s a couple seconds between pops, turn the Instant Pot off, but keep the lid on for another minute to let the remaining kernels pop.
Pour into a bowl and sprinkle with salt, to taste.
