Easy Lemon Cookies

lemon cake mix
1/3

oil
canola, vegetable, or melted coconut

eggs
lemon zest
optional
powdered sugar
for rolling cookie dough
white chocolate chips
optional
Instructions
Combine dry cake mix, oil, and eggs in a bowl. Mix until combined.
Add lemon zest and white chocolate chips (if using). Stir to combine.
Scoop dough and roll in powdered sugar.
Place on a baking sheet lined with a silicone mat.
Bake at 350 degrees for 8-12 minutes, until edges are just barely starting to brown.
